pancetta, licorice cream ()
One really impressive thing about this simple side that the three of us appreciated was the fact that the collard greens were really well cooked: tender but still toothsome, good "wok-hei" like flavouring that was slicked with a loose licorice cream (which I thought added a nice element of sweetness, aroma and made the dish less like plain sauteed Chinese broccoli, but BY thought unnecessarily distracted from the greens themselves. Though I'm not a huge fan of licorice, I appreciated its inclusion here). Bonus: curls of slightly wilted pancetta that lace the already scrumptious side dish and the crunchy shower of toasted bread crumbs scattered on top.
